Easy Easy Vegetable Rice Medley

     This recipe was so easy and it reminded me of the steamer bags of vegetables that I get at Walmart’s.  I was going through some old recipe’s looking for something else and came upon this one which really went well with dinner. Add some butter and seasonings, and it was on and popping.


     This recipe actually came from kraft foods.comhttp://www.kraftrecipes.com/home.aspx in the 2006 issue. I guess that proves I don’t throw any recipes away. It won’t take long to make, about 20 minutes. So, Let’s get started.

Ingredients

1 Tbsp. canola oil
1 each onion, carrot and stalk
of celery, chopped
1/2 of a red pepper, chopped
1 can (14 1/2 oz) chicken broth
1 1/2 cups Minute White Rice, uncooked
1 cup frozen peas

     Heat oil in a skillet. Add onion, carrot, celery and pepper; cook 5 min. or until tender.  Add broth; bring to a boil.  Stir in rice and peas; cover, Simmer for 5 minutes and remove from heat.  Let stand for 5 minutes before serving.  Makes 4 servings.

     Now how easy was that I was very pleased with the recipe and you can substitute with frozen vegetables. So, I hope you give it a try and always remember, KEEP IT SIMPLE
