Oven Roasted Potatoes And Carrots

This is going to be a very short post because, that’s how easy it is.  I have always loved oven roasted potatoes and any type of vegetable but, most of the time they would never come out right.  It is easy I just had to figure out what I was doing wrong.   It has always been said that when you cook food in the oven, you are cutting the calories and boosting up the flavor.  And that’s what I am trying to do.

 So, this time when I made them, I sprayed the foil that was on the bottom of the cookie sheet then, I added a little bit more than usual of extra virgin olive oil.  Making sure that each potato and carrot was covered in oil, I added a herb that I just love called Herbes de Provence.  This seasoning is really great when you are oven roasting anything.  So because it’s so easy, you really don’t need very much the vegetables, olive oil, salt and pepper to taste, Herbs de Provence.  Cut the vegetables in bite size pieces and lay out on the cookie sheet.

Cook in a preheated oven 350 until fork tender.  And that is it, add this one to your list of side dishes.  It’s quick and easy and I’m sure that you will be satisfied.  So until the next time, alway remember KEEP IT SIMPLE!
