Pork Roast with Vegetables

     Hey everyone, hope all is all. I haven’t really felt like doing a lot of cooking so on Sunday, my BFF decided that he would cook dinner.  Pork is something I only eat a couple time of month but I really enjoyed this pork roast with roasted veggies and baked apples.  Really a good combination sorry you can’t see the apples but take my advice, they were really good. And you see that white spot that’s one of our bloopers. It’s flour that didn’t get roasted. Oh well, it still was good.

     This was really quite easy,  but when you have two people in one house that think they can cook, you come up with all kinds of ideas on how to do something. Sometimes, we bump heads and sometimes we agree. But, you be the judge.  The  Roasted vegetables were squash, zucchini, and carrots.  The seasonings we used was Herbes De Provence. I bought this seasonings to use when I roast potatoes in the oven but, you can use it on meat, poultry, vegetables, soups or casseroles. I thought that it really brought out the taste of the roast and I would use it again.  Can’t wait to try it on some fish.  Anyway, sprinkle the roast with the seasoning and then with the flour.  Heat your oven on 450 when done seasoning the meat, put the roast on a rack, turn heat down to 325. Cook uncovered for 25-35 minutes to the pound. Remove from oven and let rest for  10-15 minutes before carving.

     You can add your vegetables in the last 35 minutes of roasting the meat.  So there you have it  step out the box and get creative but, you gotta have the baked apples with this, they taste so good. Everyone has their own recipe so, I will leave that up to you cause I can’t say what I don’t see.  This is one recipe I will re investigate again.   And always remember KEEP IT SIMPLE!
